Ingredients

Tzatziki Sauce

  • ½ block of extra firm tofu
  • ½ cucumber
  • ½ teaspoon of garlic powder
  • 1 tablespoon of lemon juice
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon of sea salt
  • Pinch of black pepper
  • ¼ cup dairy free milk

Falafel

  • 1 can of chickpeas
  • 3 tablespoons of dried parsley flakes
  • 1 tablespoon of galric powder
  • 1 teaspoon of onion powder
  • ¼ cup of all purpose flour
  • 1 teaspoons of sea salt
  • 1 ½ teaspoon of cumin
  • ½ teaspoon of coriander
  • Pinch of cayenne pepper

Instructions

  1. Today I'm going to show you how to make a baked falafel with a vegan Tatsuki sauce.
  2. For the Tatsuki sauce, put half a block of extra firm tofu in your food processor, cut the skin off of half a cucumber and remove the seeds, then add that to your food processor along with half a teaspoon of garlic powder, a tablespoon of lemon juice, a teaspoon of apple cider vinegar, 1/2 teaspoon of sea salt, and then sprinkle with black pepper.
  3. Blend your mixture until smooth, then add 1/4 cup of dairy-free milk and blend again.
    Transfer your sauce to a storage container and let it cool in the refrigerator
  4. We're going to make the falafels by putting a can of drained chickpeas in the food processor with 3 tablespoons of dried parsley flakes, 1 tablespoon of garlic powder, 1 teaspoon of onion powder 1/4 cup of all-purpose flour 2 teaspoons of sea salt 1 and a half teaspoons of cumin 1/2 teaspoon of coriander and then sprinkle with cayenne.
  5. Blend your ingredients until smooth, then mold your chickpea mixture into patties or balls and transfer to a baking sheet.
  6. Place them in a 375-degree oven for 25-30 minutes and be sure to flip them halfway through the cooking time
