Ingredients

For the crust:

  • 7 ounces of biscuits
  • 7/8 cup of unsalted butter
  • 1 tbsp of caster sugar ( if the biscuits are not sweetened enough )

For the cheesecake filling

  • 2.5cups of Philadelphia original or other creamy full-fat soft cheese
  • 1 cup Mascarpone
  • 1 cup sour cream
  • 1 1/4 cups sugar
  • 3 tbsp all-purpose flour
  • 4 eggs
  • 1tsp vanilla extract
  • 1tsp lemon extract

For the topping

  • 1cup sour cream
  • 1 tbsp sugar
  • 1 tbsp lemon

Instructions

CRUST

  1. Crush the biscuits and mix them with melted butter and sugar until the mixture is evenly moistened.
  2. Press the mixture into the bottom of the 12-inch cake pan.
  3. Bake it 10 minutes into a preheated oven at 356°F.
  4. Let it cool down

CHEESECAKE FILLING

  1. Combine the soft cheese with mascarpone and sour cream. Mix it to soften up.
  2. Add the sugar in steps and mix-it until dissolve.
  3. Add the eggs and incorporate into the cream
  4. Add the flour and incorporate it.
  5. Add the vanilla and lemon extract and stir for the last time. IMPORTANT
  6. Pour the cream over the cooled crust and bake it in oven 10 minutes at preheated oven at 428°F after that turn down the heat to 210°F and cook it 45 minutes.
  7. LET IT COOL DOWN 2 Hours into the oven with the door close ( this prevent cracks )

FOR THE TOPPING

  1. Mix the sour cream with sugar and lemon juice until the sugar has dissolved
  2. Spread out on top of the cheesecake and let it cool in the refrigerator for at least 8 hours.
