Harry Potter Birthday Cake is on the menu in Book recipe, and we are going to teach you how to make this delicious recipe from scratch!

I had fun making this one, but this is probably one of the very few baking creations I will ever make ;) hope you enjoy even though I could have used a better green icing in this video :D

Ingredients

Step 1: The Cake

I ended up making this x2 to get a higher cake :)

  • 200g Room tempered butter
  • 270g Granulated sugar
  • 3 eggs
  • 60g Cocoa powder
  • 300g Flour
  • ½ tbs Baking powder
  • 1 ½ tbs Baking soda
  • 1 tbs Vanilla powder
  • 1 tbs Salt
  • 270g Ice cold water

Step 2: Nutella Mousse

  • 2 Gelatin sheets
  • 300g Nutella
  • 3 dl Whipping cream
  • If you want, raspberries :3

Step 3: Strawberry Mousse

  • 250g Strawberries
  • 2 tbsp of icing sugar
  • 2 tbs lemon juice
  • 4dl Whipping cream
  • 4 Gelatin Sheets
  • Pink or Red food coloring

Instructions

Step 1: The Cake

  1. Cover the bottom of a springform or cake pan with removable bottom
  2. Grease the side
  3. Dust with cocoa
  4. Beat butter and sugar until white and fluffy
  5. Add the eggs one at a time
  6. Sieve the dry ingredients together in a separate bowl
  7. Add some of the dry ingredients and alternate with the water
  8. Pour it in to the cake pan
  9. Bake for about 35-40 minutes at 175 degrees Celsius
  10. Take of the rim and let cool completely

Step 2: Nutella Mousse

  1. Add the gelatin sheets in cold water for 5 minutes
  2. Heat half of the cream with Nutella on the stove until smooth
  3. Add the gelatin sheets in the warm cream
  4. Let it dissolve and allow to cool
  5. Pour the remaining cream
  6. Whisk it together so it gets creamy
  7. Level the bottom
  8. Add the rim
  9. Pour in the mousse
  10. Add some berries if you want

Step 3: Strawberry Mousse

  1. Pour all the ingredients into a pot and heat it up on the stove until boiling
  2. Mash the strawberries
  3. Sieve them to remove lumps and seeds
  4. Add the gelatin sheets in cold water for 5 minutes
  5. Add the gelatin sheets in the warm strawberry sauce. If needed, reheat the sauce in the microwave for a few seconds to dissolve the gelatin, let cool down
  6. Pour the cream into a bowl
  7. Add the food color
  8. Whisk until fluffy
  9. In another bowl, add the strawberry sauce
  10. Add the whipped cream in small portions until fully combined
  11. For easier control when applying the mousse to the cake, I used a disposable piping bag :)

Step 4: Letters

Green Icing for cakes, like buttercream frosting or something like that.

Template:

!! I used the wrong type of icing for the letters… so they will melt, if you use the wrong one, if the cake is not to be consumed right after you have applied the letters!! :)

Pipe on the letters directly on the cake if you are not going to use the same method as me :) Use the template and trace it on the surface of the cake with a tooth pick and then pipe on the green buttercreamfrosting :D

Assembling the cake!

  1. Place the cake on a nice plate :D
  2. Add the top layer, bottoms up for a nice and smooth surface ;)
  3. Pipe on a small amount of the strawberry mousse, a crumb coat
  4. Let the mousse set in the freeser for a few minuets
  5. Add the rest of the mousse and smooth it out, place in in the fridge until the mousse setts
  6. Use a template to trace out the cracks on the cake
  7. Pipe on the letters instead of placing them out, use buttercramfrosting
